SALMON BAKED IN MUSTARD SAUCE

Method:

 

Combine first 4 ingredients in saucepan; mix well.  Cook over medium heat until slightly thickened and glazed, stirring often.  Cool.  Pour over salmon, turning fish to coat.  Refrigerate at least fifteen minutes.    Preheat oven to 350 degrees.  Drain salmon; place in baking dish coated with non-stick cooking spray.  Bake salmon about 25 minutes or until fish flakes easily, basting with glaze.  Serve with remaining glaze over lightly steamed spinach; top with chopped green onion.
