Mom’s Vegetable Soup

cans diced tomatoes – basil, oregano, garlic flavor
1 small package frozen okra
1 can Veg-All – no salt added
1 can corn
1 can lima beans
1/2 bag of frozen spinach
1 can sweet peas
1 can carrots
3
Tbs extra virgin olive oil
Mix all ingredients in a big pot and
heat on medium until hot – about 45 minutes.
Of course, it’s even better the next day. You can use fresh ingredients,
but I’m not patient enough for that. If you use fresh, less sodium per serving.
Makes many, many servings (20+)
