Ingredients:
4 medium baking potatoes (4 ½” x 2 ¼”)
1 tsp oil
½ C sliced green onions
1 C 1% lowfat cottage cheese
2 TBS skim milk
1 tsp or less salt
½ tsp pepper
1 C low fat sharp cheddar cheese
paprika
Preparation:
Preheat oven to 400
Pierce potatoes w/ fork and bake 1 hr or
until tender
Allow potatoes to cool for a few minutes
Heat oil in a small skillet & saute
onions until tender
Cut potatoes in half, lengthwise
Carefully scoop inside of halves into a
large bowl
Add sauteed onions to potatoes along w/
cottage cheese, milk, salt, pepper
Mix well and fold in cheese
Stuff mixture into potatoes
Place in a baking dish and sprinkle with
paprika
Reduce oven temp to 350 and bake 20 to 30 min
