4 portions of Skinless, boneless chicken breast halves,
cut in strips
½ cup chopped onion (optional)
1 cup low fat or fat free chicken broth
1 can (14.5 oz.) Del Monte Diced Tomatoes with Basil,
Garlic & Oregano
1 1/2 cups instant brown rice
1 can (14.5 oz.) Del Monte French Style Green Beans,
drained

Coat large skillet lightly with nonstick cooking
spray. Heat over medium-high heat. Add chicken and onion. Cook and stir about 3 minutes or until
chicken is no longer pink.

Carefully stir in broth and undrained tomatoes. Bring to boil. Stir in rice and beans; reduce heat. Simmer, covered, 5 minutes.

Remove from heat.
Let stand 3 minutes covered.
Serve with grated Parmesan cheese, if desired.
